Cajun Spiced Chicken.......?

I decided to take my "Cajun Shrimp" recipe and convert it to chicken over brown rice penne pasta. I followed my "Cajun Shrimp" recipe exactly the same only substituting diced chicken breasts instead of shrimp.(recipe in Jan's Recipe Book) Just enough spice to give your tongue a little bite. Another gluten, dairy, soy, plus others free meal! I would usually serve something like this with a vegetable or a small salad but the chicken and penne pasta was enough leaving just enough room for dessert which was a couple of my "Chocolate Chip Cookies" dipped in cold rice milk!
