I just love these and I shouldn't wait so long between when I make them! The cakes are laid in a large lettuce leaf for wrapping but not until I slide my dill spread lightly over the top of the cake and sprinkle it with matchstick sliced radishes. (these recipes in my recipe book http://jansrecipebook.com/ ) The combination of these flavors is explosive and oh so tasty!!! Again....staying gluten, dairy, soy, free and then some! Here's to happy cooking and happy eating!....Jan

Smoked Salmon Tacos! Oh Yah!!
Tonight I had Smoked Salmon Tacos for dinner. Easy enough if you don't have to smoke the salmon. So be very glad if you have a smoker and can do your own. I got a large amount of smoked salmon from my daughters boyfriend as a gift today. He smoked it last night and it was fantastic! I'll be enjoying it for awhile! As for tacos its great just warmed and placed in a 100% stone ground corn taco shell (that I fry up myself )and then add lettuce and a lot of cilantro. They were soo incredibly good!!! Major points were earned for the boyfriend tonight! No spices were needed. I think it's the combination of flavors all on there own that make them so delicious! Here's to happy cooking and happy eating!............still tastefully gluten free plus!...Jan

The Best BBQ Sauce Ever And It's Gluten Free!!
I have finally made the best BBQ sauce ever!!! I made that tonight and put it on boneless skinless chicken breasts (7 of them) halved and baked at 350* for 1and 1/2 hours in a glass baking dish. Covered with foil for 45 minutes then flip chicken over and cook uncovered for 45 more minutes. Serve with favorite veggie or sweet potato or corn......mmm mmm good! When I make the sauce it makes enough to put in about 3 freezer containers so you have the sauce ready when you are wanting BBQ sauce. Oven baking is actually my second choice of use because this sauce is absolutely fantastic on the grill but it was cold out so I didn't want to brave the cold that's why I chose the oven but I'm not sorry at all! It was a fabulous dinner! I have posted this recipe (JAN'S BBQ SAUCE) once before but will again tonight! As I always say "Tastefully Gluten Free and then some!" and "Here's to happy cooking and happy eating!".......Jan
