Gluten-Free, Etc.-Free BBQ Sauce!

I mentioned in an earlier post I was going to be working a BBQ sauce............Wow!!! Light up the BBQ because this sauce is A1 top of the list for flavor. I cut up a whole chicken , parboiled it then place the pieces in a glass casserole dish. Brushed the meat with the sauce and baked it at 350* for 20 minutes then flipped and brushed again for another 20 then flipped again covered for still another 10. Served with quinoa pasta, a side of corn and a small salad....OMG! That has to be the best BBQ I've ever had! Ever! Are you ready? I'm going to give you the recipe!!!  Here's to happy cooking and happy eating gluten+ free as always!...................Jan

Tonights Dinner.....Italian Meatballs! ...of course Gluten free +

Tonight I felt like meatballs with marinara which was perfect! Not too much just small and satisfying. Like having an appetizer for dinner. Sometimes that works for me. I will be creating this week...I have been formulating for a barbecue sauce that conforms to my diet and pleases the taste buds! I'll be posting the results. I'm basing it on my mothers original recipe only modified for my needs. We'll see and I'll tell you..staying tastefully gluten free and then some! ...........Jan

Gluten-free, Dairy-free,Etc-free "Paprika Chicken"

Tonight's dinner was my "Paprika Chicken" served over rice. It's been a little while since I made it and I forgot just how tasty it is! The recipe calls for a cup of diced onion and I was about 3/4 cup short so I compromised with 1 heaping Tbsp. of dried minced onion. Also I can make a mistake from time to time reading something that says 2 Tbsp. when it was actually 1 Tbsp. like the tomato paste! I'm not always lucky with my mistakes but this one was just fine. It still came out fantastic! Here's to happy cooking and happy eating!...Tastefully gluten free!........Jan
