What other things do I eat for breakfast?

This is a question I was asked by someone who has recently purchased my recipe book. Its understandable since my recipe book has only 2 recipes for breakfast. ("Belgian Waffles" and "Blueberry Pancakes")  I do eat my pancakes a lot. Some of the other things I may eat for breakfast are fried eggs (in extra virgin olive oil), or a bowl of fruit, or 2 slices of toasted rice bread with almond butter and fresh fruit on it (sliced apple, sliced pear, blackberries, blueberries sweetened with a drizzle of honey or agave syrup). I also make an omelet wrap. ......in a small skillet sizzle 1/4 cup diced shallots in 1 Tbsp extra virgin olive oil add 1 cup fresh spinach. Simmer until spinach is wilted. Add 2 fork beaten eggs and cover. When bottom is cooked flip over and continue to cook until there is no runny egg. Place a rice tortilla on a plate and microwave for 20 seconds. Then place the omelet on the tortilla (lightly salt and pepper) and roll or wrap.I have this omelet wrap sometimes for dinner because its pretty good! .....Back to breakfast, I also will have certified gluten-free oatmeal (1/2 cup) made with water. I top with a little maple syrup and a little rice milk. Because I'm usually short on time in the morning quick is best so the toast, oatmeal, and pancakes (which I freeze ahead of time) are my most common breakfasts. I'm sure if I sit here and think about it I could come up with a lot more things I eat for breakfast. I just stay true to my "NO'S" and go from there!

More Tips to Jan's Recipes!

Last Monday I spent 3 hours power cooking. I like to keep a lot of individual single serving meals frozen so when I go to work I just grab one or two to take along with snacks and such.. With my diet I want to always make sure that I have something readily available. When I looked in my freezer I had nothing made and knew with my busy week ahead I had to do something. I have most all the ingredients for my recipes but sometimes I don't so this is what I made and here are my recipe adjustments. I made "Almost Grandma's Chicken Noodle Soup" I had all the ingredients but the parsnip! (the parsnip is very important but if you don't have any use celery instead) It turned out very good! I was also really craving my "Cajun Shrimp" but had no shrimp so I used chicken tenders instead of shrimp and the rest of the recipe exactly the same.It was fantastic! I also made my "Chicken Pesto Pasta" without any chicken and used quinoa pasta instead of rice linguine all the rest of the recipe exactly the same.Love my pesto! I then made my Spaghetti which is not in my recipe book but will be made available in the near future via video. Then to top it all off I made blueberry pancakes. Of course I didn't have enough blueberries so some were with and some were without. I left some of the food out to eat that day and for my husbands lunch the next and put 30 meals in the freezer. Not bad for 3 hours!

Regular Ground Turkey vs.Ground Turkey Breast

When making any of my recipes that require ground turkey I have found that regular ground turkey works best. You can use ground turkey breast but it will be dryer and not as juicy especially in my "Believe It Or Not Meatloaf". Speaking of my meatloaf here's a little story. My husband has never liked meatloaf. Even the name "Meatloaf" has bothered him. He thinks the words "loaf" and "meat" should not be connected. That's only the start of it. I told him I would change the name perhaps to "Giant Sliced Meatball". Not good enough. Well, when creating my recipes we had made a deal. If I'm going to spend the money on food and slave in the kitchen preparing it he has to eat it and my promise was if he absolutely hated it he would still have to eat it but I would never make it for him again!. I'll just say.."we've" had meatloaf many times now! That's how its name came to be "Believe It Or Not Meatloaf".

Tonights Gluten-free dinner.

Tonight was Green Chile Chicken Burritos from my recipe book. It's one of my husbands favorites. So, I thought I would treat him. I make them 2 different ways. Skillet browned or with a pressure cooker. Both variations are in my recipe book. Tonight was with the pressure cooker. It's funny when I look back about 15 years and remember how afraid I was to use a pressure cooker. If anyone who reads this is...don't be. You'll love how fast it cooks, how tender everything is and how easy it is to clean up. I got one for a birthday present. It's a Presto stainless steel and I follow the rules in the booklet it came with.(how much water, how many lbs, etc.) Never had a problem. It was a great dinner and there are burritos for lunch tomorrow and some to pop in the freezer for whenever.

Keeping things gluten-free!

Breakfast this morning wasn't the "Blueberry Pancakes" or "Belgin Waffles" from my recipe book but was still good. With my cup of black coffee, I had 2 slices of rice bread toasted with almond butter and a slight drizzle of honey topped with fresh blackberries.( 6 to 7 per slice) I love the seasonal fruits and blackberries are very good right now. Lunch was a serving of my "Tuna Casserole" from my recipe book. Then dinner was an egg wrap which I make by sauteeing shallots in extra-virgin olive oil then adding a cup of fresh spinach leaves and 2 fork beaten eggs. I brown, then flip and lightly salting, roll into a rice tortilla. Mmm...very good! In between these meals I had about 10 cherries, a handful of almonds, 1/2 banana and about 20 tortilla chips. Then for dessert I had 1/4 cup "Chocolate Ice Cream" from my recipe book. Just another satisfied day in the life of gluten-free, soy- free(and all other legumes), dairy-free, potato-free, refined sugar-free and my other no's.........just when I thought my day was done.....we watched a movie "The Kings Speech".  Had to have popcorn! Air popped a bowl of popcorn, sprayed it with extra virgin olive oil and lightly salted it. It was great and so was the movie!
