What other things do I eat for breakfast?

     This is a question I was asked by someone who has recently purchased my recipe book. Its understandable since my recipe book has only 2 recipes for breakfast. ("Belgian Waffles" and "Blueberry Pancakes")  I do eat my pancakes a lot. Some of the other things I may eat for breakfast are fried eggs (in extra virgin olive oil), or a bowl of fruit, or 2 slices of toasted rice bread with almond butter and fresh fruit on it (sliced apple, sliced pear, blackberries, blueberries sweetened with a drizzle of honey or agave syrup). I also make an omelet wrap. ......in a small skillet sizzle 1/4 cup diced shallots in 1 Tbsp extra virgin olive oil add 1 cup fresh spinach. Simmer until spinach is wilted. Add 2 fork beaten eggs and cover. When bottom is cooked flip over and continue to cook until there is no runny egg. Place a rice tortilla on a plate and microwave for 20 seconds. Then place the omelet on the tortilla (lightly salt and pepper) and roll or wrap.I have this omelet wrap sometimes for dinner because its pretty good! .....Back to breakfast, I also will have certified gluten-free oatmeal (1/2 cup) made with water. I top with a little maple syrup and a little rice milk. Because I'm usually short on time in the morning quick is best so the toast, oatmeal, and pancakes (which I freeze ahead of time) are my most common breakfasts. I'm sure if I sit here and think about it I could come up with a lot more things I eat for breakfast. I just stay true to my "NO'S" and go from there!
