Keeping things gluten-free!

Breakfast this morning wasn't the "Blueberry Pancakes" or "Belgin Waffles" from my recipe book but was still good.With my cup of black coffee, I had 2 slices of rice bread toasted with almond butter and a slight drizzle of honey topped with fresh blackberries.( 6 to 7 per slice) I love the seasonal fruits and blackberries are very good right now. Lunch was a serving of my "Tuna Casserole" from my recipe book. Then dinner was an egg wrap which I make by sauteeing shallots in extra-virgin olive oil then adding a cup of fresh spinach leaves and 2 fork beaten eggs. I brown, then flip and lightly salting, roll into a rice tortilla. Mmm...very good! In between these meals I had about 10 cherries, a handful of almonds, 1/2 banana and about 20 tortilla chips. Then for dessert I had 1/4 cup "Chocolate Ice Cream" from my recipe book. Just another satisfied day in the life of gluten-free, soy- free(and all other legumes), dairy-free, potato-free, refined sugar-free and my other no's.........just when I thought my day was done.....we watched a movie "The Kings Speech".  Had to have popcorn! Air popped a bowl of popcorn, sprayed it with extra virgin olive oil and lightly salted it. It was great and so was the movie!
