Tonights Gluten-free dinner.

Tonight was Green Chile Chicken Burritos from my recipe book. It's one of my husbands favorites. So, I thought I would treat him. I make them 2 different ways. Skillet browned or with a pressure cooker. Both variations are in my recipe book. Tonight was with the pressure cooker. It's funny when I look back about 15 years and remember how afraid I was to use a pressure cooker. If anyone who reads this is...don't be. You'll love how fast it cooks, how tender everything is and how easy it is to clean up. I got one for a birthday present. It's a Presto stainless steel and I follow the rules in the booklet it came with.(how much water, how many lbs, etc.) Never had a problem. It was a great dinner and there are burritos for lunch tomorrow and some to pop in the freezer for whenever.
