"Paprika Chicken" Free Of Gluten, Dairy,Soy, Etc.
I made my "Paprika Chicken" this evening for dinner. (recipe found in Jan's Recipe Book) I had all the ingredients except the dry white wine so I used a dry red instead and it was great. The recipe only calls for a quarter cup and as long as it was dry the substitute to red from white didn't compromise the flavor. I serve this over rice or pasta. I went with brown rice penne pasta tonight. I still like to add to dinner a vegetable of some sort so I sauteed some collard greens with extra virgin olive oil, fresh minced garlic and a spritz of lemon juice. It was of course delicious! I can't believe I'm on such a restricted diet when I can enjoy food like this! I again leave you all with these words...."Happy cooking and happy eating!"...................Jan

"Creamy Butternut Squash Soup" Gluten Free, Dairy Free, Soy Free, Etc.....
This is one of my most recent creations. When the weather is cool I sometimes like a bowl of soup with dinner instead of a side salad. This soup is great for that or just by itself. A nice slice of toasted rice bread or crunchy rice chips on top is also good.It's funny when I write these posts around lunch time how I want the thing I'm writing about and since I just made this soup there is some in the refrigerator calling to me. Creamy Butternut Squash Soup | |
Ingredients: | |
2 Tbs. extra virgin olive oil | |
2 med. Butternut squash cooked (4 cups worth) | |
1 cup cooked carrots | |
2 tsp. minced garlic | |
1 ½ cups coconut milk | |
1 ½ cups gluten free chicken broth | |
¼ tsp. nutmeg | |
¼ tsp. black pepper | |
Instructions: | |
In a large pot put in oil and garlic. Slightly brown the garlic then add the squash, carrots, broth, coconut milk, nutmeg and pepper. Bring mixture to a boil for 10 minutes stirring frequently. Remove from heat and let cool. Once cool, blend in blender and place in container to use when desired. | |
A Helpful tip for Jan's Recipe Book Recipe's
When making my "Cajun Shrimp"(recipes found in Jan's Recipe Book) I decided to try coconut oil instead of the extra virgin olive oil and it turned out great. I also made my "Ground Turkey Tacos" using coconut oil instead of canola oil to make the taco shells and both my husband and I agree that the coconut oil is better. They taste better and are less oily. Like with the canola make sure the coconut oil is PURE coconut oil without any additives or blends. Here's to happy cooking and happy eating!.....Jan

Eating Gluten Free, Dairy Free, Soy Free, Etc. Free.....
I've been eating without DAIRY, GLUTEN, LEGUMES, REFINED SUGAR, POTATOES, and RED MEATS since 2007 and so far so good. I tell my story on my recipe book website jansrecipebook.com and since then things have been great. I do supplements to achieve my nutritional needs. I recently was in the magazine New Pathways (the Multiple Sclerosis Recourse Centre's bi-monthly) which had an article about my success with my diet. (Nov./Dec. issue) In that article it listed all the supplements that I take which looks like a lot but many of the things listed are combined into one tablet so it really isn't that many. Eating without DAIRY was the hardest.........at first....but now?..I don't even miss it. NOT AT ALL!!! I amaze myself with that one. It's not like I'm really giving up anything since I've created things to replace them. I had Chocolate Ice Cream with Chocolate Chips just last night! I'm still creating recipes and love to share them here on my blog. I just want to say to anyone who has to restrict their diet......IT CAN BE DONE.....tastefully I might add. ......"Happy cooking and happy eating".....Jan

Gluten Free Plus "Grandma's Mockery Chocolate Cake"
This is an incredible cake. I struggled for quite awhile developing this recipe. I tried a lot of other recipes as well because life is truly incomplete without chocolate cake. When I used to eat gluten and dairy and sugar I had a great recipe from my husbands grandmother made with love (and buttermilk)! I knew it was his favorite thing so I needed to create something good. My "Grandma's Mockery Chocolate Cake" recipe (found in Jan's Recipe Book) lives up to it's name (meaning not actually but pretty darn close). I would say this recipe cuts the cake in my world! (pun intended) I've been working on a cookie recipe which is good so far but not as good as I'd like it to be. I will post the cookie recipe free for my viewers when I have perfected it so be looking forward to it! "Happy cooking and happy eating!" .... Jan
