What's For Dinner? Good and Gluten Free!

     Tonight I made my "Shrimp Scampi"over rice linguine (recipe found in Jan's Recipe Book) with a salad, a slice of garlic toast and a glass of wine. It was very tasty! I have leftovers for lunch tomorrow too! Mmmm! I make my garlic toast with a slice of rice bread brushed with extra virgin olive oil(both sides) then sprinkled with dried minced garlic, dried parsley and Hungarian paprika. Broil on both sides until brown. My salad is just mixed greens with sliced almonds, dehydrated cranberries(unsweetened), crushed rice chips for crunch and tossed with my "Apple Cider Vinegar Dressing"(also a recipe found in Jan's Recipe Book). I still follow my recipes right from the book as if I was someone else just to confirm them to be good for everyone who follows the recipe. My husband loved dinner too which was a second confirmation to following the recipe and probably the most important since he's my ultimate critic!!
