"Belgian Waffles" for dinner?
It snowed on and off all day today. Being a Sunday and feeling a little lazy I needed sweet and cheerful food so that's why the waffles. Why not? I used my "Belgian Waffle" recipe only with a gingerbread twist. Instead of rice milk I used coconut milk and add 1/2 tsp molasses to the coconut milk. Then I added 1 tsp. ginger, 1/2 tsp nutmeg, 1/4 tsp. cinnamon and 1/4 tsp. allspice to the rice flour and voila' "Gingerbread Waffles"! I think tomorrow will be a cooking day for creating and inventing! I have some things in the works and will post them as they come! Tastefully gluten free and then some,...Jan
