Dairy Free and then some "Ranch Dressing"

This is very exciting for me! I've been dairy-free (not to mention gluten-free and all my other "no's") for almost 5 years now which dismissed some foods from my mind all together like ranch dressing. It never occurred to me to have it again because of the dairy however today when making a salad I was wishing for a different dressing (not that I don't love my "White Wine Vinaigrette" or my "Apple Cider Vinegar Dressing") but I remembered how much I used to love "Ranch Dressing". It was like a light bulb switched on and I thought "why not make a mock version"! I mean I thought about it and decided to put my ideas in motion and "OMG!" I actually did it and I couldn't believe how good it was and how easy it was to make! Now you can alter it how you want by adding more or less of the ingredients but it tasted fantastic! It complies with my many "No's" which makes me quite happy! Here it is for all my blog viewers! Happy cooking and happy eating!......Jan  
Ranch Dressing

Ingredients:


2 Tbsp. fresh minced garlic

2 Tbsp. fresh chopped chives

2 Tbsp. fresh chopped  or  dried parsley

1 cup Canola mayonnaise

1 cup coconut milk

1 tsp apple cider vinegar

½ tsp. sea salt

¼ tsp. dill weed

Instructions:

Place all the ingredients in a bowl and whisk together.  Put into a sealed container or jar and keep refrigerated.
