Gluten Free Blueberry Pancakes for Breakfast!


     Today was another great morning with my gluten, dairy, soy, etc. free diet. "Blueberry Pancakes"(recipe found in Jan's Recipe Book) with a fried egg, some turkey bacon and a cup of black coffee. Of course the pancakes were topped with 100% pure maple syrup. I made a double batch of pancakes so there would be leftovers which I freeze for breakfast or lunch during the work week. I keep portioned meals frozen to take to work so during the week I don't need to worry about "what's for lunch". So I leave again with these words...."Happy cooking and happy eating!"......Jan
